Mango Banana Bread
Ingredients
- 2 cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ cup butter, softened
- 1 cup sugar
- 2 large eggs
- 1 cup mashed ripe bananas (approx. 3 medium)
- 1 tsp vanilla extract
- 1 cup fresh mango, diced into small cubes
Instructions
- Preheat oven to 350°F (180°C) and grease a 9×5-inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
- In a large bowl, cream softened butter and sugar until fluffy; beat in eggs one at a time.
- Stir in mashed bananas and vanilla extract until well combined.
- Slowly add the dry ingredients to the wet ingredients, stirring until just moistened.
- Gently fold in the diced mango cubes.
- Pour batter into the pan and bake for 50–60 minutes, or until a toothpick comes out clean.
