How to Cut a Mango
Ready to break it down? Whether you’re the one at the cutting board or you’ve drafted some help, cutting a mango the right way means getting the most fruit out of it. The first thing to understand is what’s going on inside: there’s a long, flat pit running through the center of every mango, and your job is to work around it.
Stand the mango upright and slice along either side of the pit to free the two large “cheeks.” You’ll have two rounded halves and a middle section around the pit. With each cheek, use your knife to score the flesh in a grid — first in one direction, then the other — cutting deep enough to reach the skin but not through it. Flip the cheek inside-out and the cubes will spread apart and lift away. Slide your knife underneath to drop them into a bowl.
