Mango Halloween Sushi Rolls
Ingredients
- ¼ cup sushi rice
- 1 tablespoons rice wine vinegar
- 1 ripe mango
- 1 sheet nori (seaweed)
- ½ teaspoon sugar
- ¼ teaspoon salt

Instructions
- Peel and cut the ripe mango into thin strips.
- In a small bowl, season the rice combining the rice vinegar, sugar and salt until fully dissolved.
- Assemble the roll, lay down 1 nori sheet (shiny side down) on a bamboo sushi mat.
- Spread a thin even layer of the seasoned rice onto the nori.
- Arrange the mango strips along the bottom edge of the rice.
- * Optional: For a fun twist, shape the sushi roll like a caterpillar using mango to create a spooky effect.
- Roll the sushi, starting from the edge closest to you, carefully roll the sushi over the filling.
- Pressing gently to keep it tight and seal the edges with a bit of water.
- Slice the roll into bite size pieces.
- Cut nori pieces into tiny circles and place on top for eyes.
Serve immediately and enjoy!
