Mango Halloween Sushi Rolls

Ingredients

  • ¼ cup sushi rice
  • 1 tablespoons rice wine vinegar
  • 1 ripe mango
  • 1 sheet nori (seaweed)
  • ½ teaspoon sugar
  • ¼ teaspoon salt

Instructions

  1. Peel and cut the ripe mango into thin strips.
  2. In a small bowl, season the rice combining the rice vinegar, sugar and salt until fully dissolved.  
  3. Assemble the roll, lay down 1 nori sheet (shiny side down) on a bamboo sushi mat.  
  4. Spread a thin even layer of the seasoned rice onto the nori.  
  5. Arrange the mango strips along the bottom edge of the rice. 
  6. * Optional: For a fun twist, shape the sushi roll like a caterpillar using mango to create a spooky effect. 
  7. Roll the sushi, starting from the edge closest to you, carefully roll the sushi over the filling.  
  8. Pressing gently to keep it tight and seal the edges with a bit of water.  
  9. Slice the roll into bite size pieces.  
  10. Cut nori pieces into tiny circles and place on top for eyes.  

 

Serve immediately and enjoy!
