Grilled Mango Veggie Skewers
Ingredients
- 3 mangos
- 1 red pepper
- 1 orange pepper
- 1 medium zucchini
- 1 medium red onion
- Teriyaki sauce, to taste

Instructions
- Preheat grill to medium heat.
- Soak wooden skewers for at 30 minutes while preparing the recipe.
- For the skewers: cut the mango in large cubes, chop the red onion, orange pepper, zucchini and red pepper into large pieces.
- Thread veggies and mango onto skewers.
- Place the skewers on a tray and brush them with teriyaki sauce.
- Load onto the grill glaze side down, and then glaze the other.
- Prepare quinoa to serve alongside the skewers. Feel free to add any protein you’d like.
