INGREDIENTS
1 cup quinoa, cooked1 can organic black beans, rinsed and drained1 fresh mango, chopped1 cucumber, chopped1 handful of cilantro1 tbsp red onion, chopped1 tsp cumin½ tsp chili powder½ tsp coriander1 tsp garlic powder1 lemon, juicedMix ingredients and store in fridge.
Serve cold or at room temperature, and enjoy!
