INGREDIENTS2 Tbsp. hummus2 large whole grain tortillas1 medium tomato, diced1 small avocado, peeled, pitted and diced1 large mango, peeled and dicedSea salt and pepper, to taste1/4 tsp. chili powder1 Tbsp. cilantro2 small scallions, thinly sliced
Spread the hummus on the tortillas, add the tomato, avocado, mango, salt, pepper, chili powder, cilantro and scallions. Wrap like a soft taco and serve immediately.
