Vegan Avocado Mango Cucumber Sushi

INGREDIENTS

  • Nori sheets
  • 1 cup brown rice, cooked
  • 1 large avocado, sliced
  • 1 cucumber, sliced
  • ½ fresh mango, sliced
  • Sesame seeds, to taste
  • Place a nori sheet shiny side down and spread rice onto the sheet in a thin layer. Add slices of cucumber, mango and avocado. Roll tightly, and seal by adding drops of water to the edge of the nori sheet. Cut the roll in half, then in thirds, and top with sesame seeds. Enjoy!
