Cucumber Mango Salad

Ingredients

  • 1 cucumber, spiraled or julienned
  • 1/3 cup freshly chopped mango
  • 2 tbsp dried fruit (raisin, berries, etc)
  • 2 tbsp nuts or seeds of choice
  • 1/4 cup cooked grains (quinoa, brown rice, millet, etc)
  • 1/2-1 tsp grated ginger
  • Pepper to taste
  • 1-2 fresh basil leaves
  • 2-3 tsp balsamic vinegar or glaze
  • 1-2 tsp olive oil

Instructions

  1. Toss ingredients together in a bowl and enjoy!
