Spiral Mango Noodle Salad

Ingredients

  • 3 lb Spiralized Unripe Mango
  • 1 lb Shredded Cabbage
  • 1 lb Salad Greens
  • 4 oz Red Peppers, julienne
  • 8 fl oz Mango Sesame Vinaigrette
  • 1 tbsp Sesame Seed Mixture
  • 2 tbsp Green Onions

Mango Sesame Vinaigrette

  • 9 fl oz Balsamic Dressing, pre-bought/made
  • 1 Fresh Ripe Mango 1/2", diced
  • 1 fl oz Apple Cider Mango
  • 2 tsp Sesame Oil

Instructions

Mango Sesame Vinaigrette

  1. Combine all ingredients into a blender and blend for 1 minute.

  2. All the large pieces of mango should be pureed down and mixed with dressing. If you still see larger pieces continue to blend until smooth.

  3. Place into storage container to serve.

Mango Noodle Salad Build

  1. In a large mixing bowl add inthe mango, cabbage, red peppers, salad greens and mango spirals/noodles.

  2. Ladle the dressing around the outside of the bowl and mix the salad mixture with the dressing.

  3. To plate using tongs twist portion of mixture on tongs to ensure that all ingredients are present. Place in the center of the plate.

  4. Top with sesame seed mixture and green onions.
