{"id":44345,"date":"2022-01-19T07:20:25","date_gmt":"2022-01-19T07:20:25","guid":{"rendered":"http:\/\/www.mango.org\/recipes\/relleno-de-pan-de-maiz-con-mango-y-jalapeno\/"},"modified":"2024-07-25T18:14:05","modified_gmt":"2024-07-25T22:14:05","slug":"relleno-de-pan-de-maiz-con-mango-y-jalapeno","status":"publish","type":"recipes","link":"https:\/\/www.mango.org\/es\/recipes\/relleno-de-pan-de-maiz-con-mango-y-jalapeno\/","title":{"rendered":"Relleno De Pan De Ma\u00edz Con Mango Y Jalape\u00f1o"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p><!--WPRM Recipe 45170--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Relleno De Pan De Ma\u00edz Con Mango Y Jalape\u00f1o<\/h2>\n<p><img decoding=\"async\" class=\"wprm-fallback-recipe-image\" src=\"http:\/\/www.mango.org\/wp-content\/uploads\/2020\/11\/cornbread45angle-150x150.jpg\" \/><\/p>\n<div class=\"wprm-fallback-recipe-equipment\"><\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<ul>\n<li>5 tbsp Unsalted Butter, divided<\/li>\n<li>6 cup Cooked Cornbread, diced*<\/li>\n<li>1\/2 cup Small, Diced Celery<\/li>\n<li>1\/2 cup Small, Diced White Onion<\/li>\n<li>1\/4 cup Jalape\u00f1o, divide<\/li>\n<li>2 tbsp Minced Garlic<\/li>\n<li>2 cup Small, Diced Mango<\/li>\n<li>2 cup Chicken Stock, divided<\/li>\n<li>1 cup Buttermilk<\/li>\n<li>4 Large Eggs<\/li>\n<li>2 tbsp Chopped Parsley<\/li>\n<li>1 tsp Ground Coriander<\/li>\n<li>1 1\/2 tsp Salt, divided<\/li>\n<li>1 tsp Ground Black Pepper<\/li>\n<li>1\/2 tsp Poultry Seasoning<\/li>\n<li>1\/4 tsp Ground Chipotle Pepper, optional<\/li>\n<li>1 15-ounce Can of Corn, drained<\/li>\n<li>1\/2 cup Diced Scallions, green part only<\/li>\n<\/ul>\n<\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Preheat the oven to 350 degrees \u00b0F. Grease a 9&#215;13 pan or cast iron skillet liberally with 1 tablespoon of butter and set aside.<\/li>\n<li>Make the cornbread and set aside to cool*<\/li>\n<li>In a large saut\u00e9 pan over medium-high heat, add 4 tablespoons of butter.<\/li>\n<li>Add celery and onion with \u00bd teaspoon salt. Saut\u00e9 until tender and golden, approximately 3 minutes.<\/li>\n<li>Add 1\/8th cup diced jalape\u00f1o and saut\u00e9 for 1 minute.<\/li>\n<li>Add garlic and saut\u00e9 for 1-minute, stirring frequently to prevent burning. Add the fresh mango and continue saut\u00e9ing for 2 minutes.<\/li>\n<li>Carefully move the cooked ingredients to a medium sized bowl. Set aside.<\/li>\n<li>Deglaze the pan with 1 cup of chicken stock. Turn off heat and set aside.<\/li>\n<li>In a large mixing bowl, whisk together buttermilk, eggs, parsley, remaining chicken stock, coriander, salt, pepper, poultry seasoning, and chipotle pepper, if using until all ingredients are fully incorporated.<\/li>\n<li>If the chicken stock is still hot, slowly temper the hot liquid into the large mixing bowl to prevent the eggs from curdling.<\/li>\n<li>Add the cooked mango mixture to the mixing bowl followed by the can of corn and reserved diced jalape\u00f1o and scallion.<\/li>\n<li>Add 6 cups diced cooked cornbread to the liquid mixture and gently mix by hand until well incorporated.<\/li>\n<li>Move the mixture into the greased pan and place in the oven to bake for 45 minutes*.
