HOW TO SELECT A HANDLE

Don't focus on color, it's not the best indicator of maturity. Instead, use your experience with peaches or avocados and squeeze the mango gently. A ripe mango will be slightly soft to the touch.

The National Mango Board has great tips and videos on how to slice a mango here, or you can follow these three easy steps:
1. A mango has a long, flat seed in the center of the fruit. Place the mango on the cutting board with the stem end down and hold it. Position your knife about 1/4" from the widest center line and cut through the handle. Flip the handle over and repeat this cut on the other side. You now have two "cheeks". What remains in the middle is mostly the seed of mango

2. Take each cheek and cut parallel slices into the mango flesh, being careful not to cut through the skin. Rotate the cheek of the handle 1/4 rotation and cut another set of parallel slices to make a checkerboard pattern.

3. Now you can "slice and scoop": Scoop the mango slices out of the mango skin with a large spoon, or try the "Upside Down" method, where you flip the grooved cheek of the mango by pushing the skin up from below. and scrape the mango pieces from the skin with a knife or spoon.
