Mango and Farro Salad
Ingredients
SALAD
- 2 cup cooked farro
- 1-1/2 cup diced mango
- 1/4 cup finely diced red onion
- 1 diced red bell pepper
- 1 diced avocado
DRESSING
- 2 tbsp olive oil
- 2 tbsp fresh lime juice
- 1/4 ts[ Dijon mustard
- 1/4 cup chopped cilantro

Instructions
Combine farro, mango, red onion, red bell pepper and avocado in a large bowl.
In another bowl, whisk together olive oil, lime juice, Dijon mustard and cilantro.
Pour dressing over salad and toss to combine.
