Mangos Visit the Gateway to the West – St. Louis
The Mango Hometown Tour kicked off in St. Louis where local chefs Josh Galliano of Monarch and Nick Miller of Harvest competed to create a mango dish capturing the city’s local flavor and reflecting New American cuisine. Chef Galliano was named the winner by the panel of three local food experts serving as judges.
Hosted at Monarch, the chefs went toe-to-toe in the kitchen as approximately 100 guests took in the action. Chef Galliano, known for his unique cooking techniques and ability to combine flavors, created shrimp chorizo with mango romescu, mango tuille and whipped mango vinegar. Chef Miller, who emphasizes the use of seasonal products, dished up a mango-pork trio with three different preparations of pork and mango combinations, including pork belly on brioche toast with mango yolk, Canadian bacon rolled inside fresh mango, and carnitas with mango salsa.
Judging the event were Katie O’Connor, Editor of Sauce Magazine; Evan Benn, St. Louis Post-Dispatch features reporter and editor; and Alanna Kellogg of Kitchen Parade. After much deliberation, Chef Galliano was declared the winner based on his creative use of mango and how well he captured the New American theme.
About Chef Josh Galliano
Galliano studied at Le Cordon Bleu in London where he worked at Roussillon and The Connaught Hotel. Upon graduation, Galliano headed back to the states working in New Orleans and New York before landing in St. Louis. In his current position as executive chef at Monarch, Galliano creates an ingredient-driven menu that utilizes fresh produce.
About Chef Nick Miller
A graduate of the California Culinary Academy, Miller began his career working under Gary Danko in San Francisco before returning to his hometown of St. Louis. Following his return, Miller served as chef at Harvest for four years before taking over as owner. At Harvest, Miller emphasizes the use of seasonal products to create delectable dishes.
