    Vegan Mango Quinoa Salad

    Ingredients

    1 cup quinoa, cooked
    1 can organic black beans,
    rinsed and drained
    1 fresh mango, chopped
    1 cucumber, chopped
    1 handful of cilantro
    1 tbsp red onion, chopped
    1 tsp cumin
    ½ tsp chili powder
    ½ tsp coriander
    1 tsp garlic powder
    1 lemon, juiced

    Instructions

    Mix ingredients and store in fridge.
    Serve cold or at room temperature, and enjoy!
