    Tropical Baked Oatmeal

    Ingredients

    1-1/2 cups quick-cooking oats
    1/4 cup packed brown sugar
    1/2 teaspoon cinnamon
    1 teaspoon baking powder
    Pinch of salt
    2 tablespoons ground flaxseed meal
    4 tablespoons water
    1/2 cup almond milk
    1/3 cup maple syrup
    2 tablespoons oil
    1-1/2 cups chopped mango
    1/3 cup shredded coconut

    Instructions

    1. Preheat oven to 350 degrees.
    2. Whisk together oats, brown sugar, cinnamon, baking powder and salt in a large bowl.
    3. In another bowl, whisk together flaxseed meal and water. Let sit for five minutes until gelled. Then add almond milk, maple syrup and oil.
    4.  Add wet mix to dry mix until combined.
    5. Stir chopped mango and shredded coconut into mixture.
    6. Pour mixture into an 8x8 inch baking dish and top with more coconut.
    7. Bake for 30 minutes until golden brown.
