Spicy Mango Bruschetta

    2 cups roasted tomatoes, small dice
    2 ripe fresh mangos, small dice
    1/2 cup fresh basil leaves, fine chiffonade (reserve 1/4 cup for garnish)
    5-7 cloves garlic, roasted and minced (reserve roasting oil 1/4 cup and reuse into this recipe)
    3 tablespoons white balsamic glaze
    2 tablespoons Calabrian chiles, crushed
    Salt and pepper, to taste
    24 slices grilled baguette or crostini
    1/2 cup Ricotta Salata, shredded


    To make spicy mango topping: Fold tomatoes, mangos, basil, garlic and oil used for roasting, balsamic glaze, and chilies. Season to taste with salt and pepper. Cover and refrigerate until service.

    To assemble: Top toast pieces with spicy mango topping and sprinkle with cheese and reserved basil.
