Mango Fool

    3 tablespoons Meyers rum
    2 tablespoons unflavored gelatin
    1 1/2 cup freshly pureed mango (2 large mangos yield 2 ¼ cup mango puree)
    2/3 cup powdered sugar
    3 tablespoons fresh lime juice
    1 1/2 cup heavy cream, whipped
    1 ripe mango, peeled, pitted and sliced (garnish)


    Place rum in a small bowl and sprinkle gelatin over the surface; let stand for 5 minutes. Place bowl in a larger pan of warm water and stir until melted. In a separate bowl, stir together mango puree, powdered sugar and lime juice; mix in softened gelatin. Fold in whipped cream, mixing just until smooth. Spoon into 6 tall parfait glasses and chill for 2 hours. Garnish each with fresh mango slices.
