After all, he wrote the dictionary on Mexican ingredients, Diccionario Enciclopedico de la Gastronomia Mexicana, and is a sought-after expert for cookbooks, restaurant menu development, and culinary conferences throughout the world. At his downtown restaurant, Azul Historico, Muñoz Zurita dedicates the entire month of April to celebrate the mango. During this “mango festival,” he debuts a special menu, with each dish featuring fresh mango.
