If you’re already a lover of all things mango we challenge you to take it up a notch and be more adventurous in honor of National Mango Month. Try new cuisines like Mango Gazpacho and Spiced Shrimp Skewers for a fun yet fancy dish. The cool Gazpacho offsets the spiciness of the shrimp, the perfect light dinner after a long summer day. If you’ve never had gazpacho, here’s a little background: Gazpacho is a cold dish originally made in the southern Spanish region of Andalusia. It is a chilled soup made from raw vegetables, traditionally with a tomato base. Over the years, the recipe has been adapted into many variations like our delicious mango-inspired version.
