Mango Jalapeño Chutney

1 fresh mango, peeled and sliced
1 shallot or 1/2 cup red onion, sliced
1/2 cup coconut sugar
1/2 cup apple cider vinegar
1-2 tbsp fresh lime juice
1 jalapeño, chopped
1 tsp salt


  1. Cook all ingredients except cilantro on medium-high until fruit and jalapeños soften.
  2. Remove from stove and place ingredients in a food processor.
  3. Pulse ingredients until mixed but still chunky and thick.
  4. Garnish with cilantro and serve.
